Thursday again!! and shopping day, where do the weeks go? My frugal pursey is getting a bit carried away with the heat at the moment and she is spending far too much, naughty naughty!! and our stocks of food are ever increasing. Nothing is getting wasted but not much seems to be getting used either. So for next month it will be Austerity August and I will NOT do unnecessary shopping, just the very basics and try and use some of the stocks.
I have a huge tub of Roasted veg Cous Cous in the cupboard and in the fridge were a few mushrooms going wrinkly so I quickly put together this little lunch with a drizzle of Honey & Mustard salad dressing it was very tasty indeed. The mushrooms were just broken into pieces and microwaved a couple of minutes, the liquid was poured off and then they were popped into the frying pan with a tiny bit of oil and "fried off" I find doing them this way stops them absorbing too much fat and being greasy.
For dessert it was wrinkly fruits with a few strawberries from the garden and a glug of fresh orange juice, I needed a bit more juice so I opened a can of basics pineapple chunks and tipped that in which made the rest of it stretch into another couple of portions.
I love a nice chilled fruit salad on a hot day.
Tea for tonight will be Pork Steaks and the last few wrinkly mushrooms, new potatoes and salad.
The last of the homegrown strawberries with a blob of greek yogurt for dessert.
Then when its cooled down a bit I have to hoover the caravan and pack up for the weekend, again it will be free camping and a free "do" at the flying club. I think the weather forecast for the weekend is much the same HOT HOT HOT!!
